This delicious and nutritious biryani made with broccoli is a suited for any occasion – be it a lazy weekend lunch or a dinner party or even an office/school lunch box.
Ingredients:
Basmati Rice – 3 cups, cooked
Broccoli – 2 cups, chopped
Ginger Garlic Paste – 2 to 3 tsp
Green Chillies – 5 to 6
Onions – 2, finely sliced
Tomatoes – 2, finely chopped
Mustard Seeds – 1 tsp
Saunf – 1 tsp
Bengal Gram Dal – 2 tblsp
Cloves – 4 to 5
Cinnamon – 2 inch piece
Cardamoms – 4 to 5
Bay Leaf – 2
Turmeric Powder – 1/2 tsp
Red Chilli Powder – 1/2 tsp
Oil – 2 tblsp
Coriander Leaves – handful, chopped
Mint Leaves – handful, chopped
Curry Leaves – few, chopped
Salt as per taste
Method:
1. Heat 2 tblsp oil in a nonstick pan over medium flame.
2. Add the mustard seeds, saunf and fry for 30 seconds.
3. Add the cloves, cinnamon, cardamoms, bengal gram dal and bay leaf.
4. Fry for another 30 seconds.
5. Add the ginger garlic paste, curry leaves, mint leaves, onions, coriander leaves and green chillies.
6. Saute for a minute more.
7. Add the tomatoes and cook for 2 to 3 minutes.
8. Add the broccoli pieces, turmeric powder, red chilli powder.
9. Stir to mix well.
10. Cook for 3 to 5 minutes.
11. Pour 1/4 cup of water and add enough salt.
12. Cook until all water has evaporated or absorbed, stirring from time to time.
13. Add the cooked rice and mix well.
14. Remove and serve hot.
