Ingredients:
Plain Flour – 340 grams
Ground Cinnamon Powder – 1/4 tsp
Ground Nutmeg Powder – 1/4 tsp
Mixed Spice – ½ tsp
Butter or Margarine – 75 grams
Soft Brown Sugar – 180 grams
Sultana – 180 grams
Cleaned Black Currants – 180 grams
Raisins – 150 grams
Finely Chopped Candied Peel – 30 grams
Cherries – 60 grams
Finely Grated Lemon Rind of One Lemon
Milk – 1/4 litre
Soda Bicarb – ¾ tsp
Salt – 1 pinch
Method:
1. Grease and line the baking tin.
2. Brush the paper with little butter.
3. In steel bowl, sift the flour with salt.
4. Mix the spices.
5. Rub in the butter.
6. Add brown sugar.
7. Mix the fruit and stir well.
8. Make a hollow in the centre of the mixture and pour the milk keeping aside 2 tbsp of it.
9. Stir lightly.
10. Warm the 2 tablespoons of milk till very hot and pour over the soda bicarb.
11. Stir in quickly (in the cake mixture) without beating.
12. Pour the mixture into a 7 inches tin (already greased and lined).
13. Bake in a moderate oven for about an hour.
14. Then reduce the heat and bake till done.
