Orange Cranberry Muffins

Orange Cranberry Muffins

Butter – 1/2 tblsp
Brown Sugar – 1/4 cup
Cinnamon – 1/4 tsp
Wheat Flour – 1 cup
Baking Powder – 1 tsp
Baking Soda – a pinch
Salt – 1/2 tsp
Sugar – 1/4 cup, granulated
Orange Zest – 1 1/2 tblsp, grated
Orange Juice – 1/2 cup
Egg – 1, lightly beaten
Cranberries – 1/2 cup, chopped
Walnuts – 1/4 cup, finely chopped

1. Combine the butter, brown sugar and cinnamon in a bowl.
2. Separately mix the wheat flour, baking powder, baking soda, salt, sugar and orange zest in an another bowl.
3. Mix the orange juice, eggs, walnuts and cranberries in an another bowl.
4. Add this to the flour mixture and mix until well combined.
5. Divide this evenly among greased muffin cups.
6. Sprinkle the cinnamon and sugar mixture on top.
7. Bake in a preheated oven at 180C for 10 to 15 minutes or until the top is light golden brown.
8. Remove and cool.
9. Serve.
