Ingredients:
Prawns - 1 cup, shelled and cleaned
Garlic - 4 large cloves
Red Kashmiri Chillies - 4 dried
Turmeric Powder - 1 1/2 tsp
Cumin Seeds - 3/4 tsp
Onion - 1 medium, finely sliced
Onions - 3, medium, chopped
Coriander - 1 1/2 tblsp, finely chopped
Tamarind Concentrate - 1 tsp
Jaggery - 1 tblsp, grated
Salt - 1 1/2 tsp
Vegetable Oil - 2 tblsp
Method:
1. Grind the garlic, kashmiri chillies, turmeric powder and cumin seeds to a paste.
2. In a pan, heat oil, add 1 sliced onion and fry till golden brown.
3. Add masala paste and cook for 5 minutes till well blended.
4. Add prawns and stir till well mixed with onion mixture.
5. Add chopped onion, coriander and salt and stir well.
6. Add 14/ cup water, cover and simmer, allowing prawns to cook in onion juice.
7. When prawns are cooked, add tamarind concentrate and jaggery and cook a few minutes longer till jaggery has melted.
8. Serve sprinkled with some chopped fresh coriander.
