Vietnamese style Chicken and Mango Rice Paper Rolls
Chicken – 3/4 cup, cooked, shredded
Vermicelli Noodles – 50 gms, boiled, drained
Sesame Oil – 1/2 tsp
Sweet Chilli Sauce – 1 tblsp + 2 tblsp
Rice Paper Sheets – 5 to 6
Peanuts – 2 tblsp, crushed
Red Capsicum – 1/2, seeds removed, sliced into strips
Mango – 1, small, sliced
Lime Juice – 1/2 tblsp

1. Mix the chicken, sesame oil and 1 tblsp chilli sauce in a bowl.
2. Dip the rice paper sheets in a bowl of warm water until soft.
3. Squeeze any excess water and lay them flat on a work surface.
4. Add peanuts, capsicum, chicken mixture, mango and noodles.
5. Fold over and roll tightly. Repeat with the remaining sheets.
6. Combine 2 tblsp chilli sauce and lime juice in a bowl.
7. Serve the rolls with the chilli sauce.
