Tamarind Vegetable Soup

Tamarind Vegetable Soup
Ingredients:
Water – 5 cups
Corn – 1, cut in half
Garlic – 6 to 8 cloves
Small Onion – 1, large
Red Chilli Powder – 1/8 tsp
Dried Shrimp Paste – 1/4 tblsp
Cabbage – 1 1/2 cup, chopped
Green Beans – 60 gms, ends trimmed, halved
Brinjal – 1 1/2 cups, peeled, sliced
Shrimp – 125 gms, peeled, tails intact
Tamarind COncentrate – 1/3 cup
Salt – 1 1/2 tsp
Sugar – 1 1/2 tsp

Method:
1. Boil the water in a large pan over high flame.
2. Add the corn and boil for another 15 minutes.
3. Combine and grind together garlic, onions, shrimp paste and red chilli powder to a smooth paste.
4. Add this to the boiling water.
5. Add salt, sugar and tamarind concentrate.
6. Stir and mix well.
7. Add the cabbage, beans, brinjals and shrimps.
8. Reduce flame to medium and simmer for 5 to 10 minutes.
9. Remove and pour into individual bowls.
10. Serve warm.
