Lamb Boti Kebab
Lamb – 500 gms, boneless pieces, chopped
Ginger Garlic Paste – 1/4 cup
White Pepper Powder – 1/2 tsp
Cumin Powder – 1/2 tsp
Green Cardamom Powder – 1/2 tsp
Lemon Juice – 2 to 3 tblsp
Raw Papaya Paste – 2 tblsp
Hung Yogurt – 1/8 cup
Red Chilli Powder – 1 tsp
Oil – 1/4 cup
Salt as per taste

1. Combine the papaya paste, lemon juice, ginger garlic paste and salt.
2. Mix well and marinate the lamb in this mixture for 30 minutes.
3. Mix all the other ingredients except butter and marinate the lamb for 2 hours.
4. Then skewer the lamb pieces and roast in an oven/grill for 15 minutes.
5. Remove and baste with butter.
6. Roast again for 3 minutes.
7. Remove and serve hot with salad and onion rings.
