Chocolate Ginger Cake
Maida – 1 cup
Wheat Flour – 1/3 cup
Unsweetened Cocoa – 1/3 cup
Baking Powder – 1 tsp
Baking Soda – 1 tsp
Salt – a pinch
Eggs – 2
Granulated Sugar – 2/3 cup
Low-fat Milk – 75 ml
Applesauce – 1/3 cup
Vegetable Oil – 1/4 cup
Ginger – 3 tblsp, grated
Vanilla Extract – 2 tsp
Icing Sugar – 1 tblsp, optional

1. Combine the maida and wheat flour along with cocoa, baking powder, baking soda and salt in a large bowl.
2. Whisk together eggs, sugar, milk, applesauce, oil, ginger and vanilla extract in a separate bowl.
3. Mix both and whisk together until well combined.
4. Pour the batter in a greased cake pan.
5. Bake in a preheated oven at 180C/350F for 30 minutes or until a knife inserted in the centre comes out clean.
6. Remove and keep aside to cool.
7. Dust with icing sugar.
8. Cut into slices and serve.

Tip: You can also garnish with blueberries and strawberries.
