Curried Mutton Pulao Recipe

Basmati Rice – 500 gms
Whole Cardamoms – 2, slightly opened
Cinnamon – 1 one inch stick
Cloves – 3
Salt as per taste
Mutton Kurma – 500 gms, with 1 cup gravy
Saffron – 1/4 tsp, soaked in 1 tblsp of milk
Juice of 1 Lime
Curd – 1 tblsp
Onions – 2, finely sliced
Cardamoms – 3, powdered
Ghee – 1 tblsp

1. Using this recipe here, make the mutton kurma.
2. Soak rice for 20 minutes in water and drain.
3. Boil 1 1/2 litres of water in a pan.
4. Add the whole cardamoms, cinnamon, cloves and salt.
5. Bring to a boil.
6. Add rice to the boiling water and cook till it is 2/3rds done.
7. Drain.
8. Spread the korma at the bottom of a pan.
9. Cover with rice.
10. Sprinkle saffron, lime juice, curd and powdered cardamoms over the rice.
11. Cover with a tight fitting lid and pressure cook for 40 minutes over very low heat.
12. Garnish with fried onions.
13. Serve hot.
