Okra and Onion Rice

Ingredients:
Rice – 1 cup
Oil – 2 tblsp
Cumin Seeds – 1/2 tsp
Onion – 1 large, minced
Okra (Lady’s Finger) – 100 gms, cut into 1 inch pieces
Curry Masala – 1 tblsp
Curry Leaves – 7 sprigs
Salt – 1 tsp
Coriander Leaves – 1 tblsp, chopped, for garnish

Method:
1. Wash rice and soak in water for 15 minutes.
2. Heat oil in a heavy based pan over moderate heat.
3. Sprinkle in cumin seeds and when they splutter, add onion.
4. Fry till brown.
5. Add okra, curry masala, curry leaves and salt.
6. Reduce heat to very low and cook, stirring frequently for 10-15 minutes, till okra becomes dry.
7. Remove okra from pan with a slotted spoon and set aside.
8. Drain rice and add to pan.
9. Stir till translucent.
10. Mix in salt and 2 cups of water.
11. Cook rice for 10 to 15 minutes till water is absorbed and rice is tender.
12. Gently stir in okra, garnish with coriander leaves.
13. Serve hot.
