Thengai Masala Kuzhambu

Ingredients:
Tamarind – small lemon sized
Small Onions – 10, peeled
Tender Brinjals – 250 gms
Salt to taste
Gingelly Oil – as required

Fry in a little oil and Grind to a smooth paste:
Cloves – 6
Cardamom – 6
Poppy Seeds – 1 tsp
Cinnamon – 1/2 inch piece
Channa Dal – 2 tsp
Coriander Seeds – 4 tsp
Red Chillies – 8
Coconut – 1 cup, grated

For Seasoning:
Mustard Seeds – 1 tsp
Asafoetida – few
Channa Dal – 1 tsp
Fenugreek Seeds – 1/2 tsp

Method:
1. Extract 2 cups of tamarind juice.
2. In a heavy bottomed vessel, heat oil.
3. Lightly fry all the seasonings.
4. Add the onions and saute.
5. Add the brinjals.
6. Pour in the tamarind extract.
7. Boil well till brinjals are done.
8. Add required salt and ground paste.
9. Boil for a few minutes and serve hot.
