Zucchini Chocolate Cake

Ingredients:
Margarine or Butter – 1/2 cup, softened
Vegetable Oil – 1/2 cup
Granulated Sugar – 1 2/3 cups
Eggs – 2
Vanilla – 1 tsp
Chocolate Flavoring – 1/2 tsp
All Purpose Flour – 2 1/2 cups
Cocoa – 1/4 cup
Baking Soda – 1 tsp
Salt – 1/2 tsp
Buttermilk – 1/2 cup
Zucchini – 2 cups, shredded
Chocolate Chips – 3/4 cup, semisweet
Nuts – 1/2 cup, chopped

Method:
1. Preheat oven to 325F.
2. Grease and lightly flour a 13×9 inch baking pan.
3. Beat together margarine, oil and sugar in a large bowl until light and fluffy.
4. Add eggs, one at a time, beating well after each addition.
5. Blend in flavorings.
6. Combine dry ingredients.
7. Add to creamed mixture alternately with buttermilk, beating well after each addition.
8. Stir in zucchini.
9. Pour into prepared pan.
10. Sprinkle with chocolate chips and nuts.
11. Bake for 55 minutes or until wooden pick inserted in center comes out clean.
12. Cool on wire rack.
13. Cut into squares.
14. Frost with chocolate frosting, if desired.
