Ingredients:
Moong Dal – 3/4 cup
Turmeric Powder – 1/2 tsp
Oil – 2 tblsp
Water – 1 1/2 cups
Onion – 1, large
Zucchini – 2
Tomatoes – 2, medium
Garlic – 2 flakes
Curry Leaves – 5
Dry Red Chillies – 2
Mustard Seeds – 1/2 tsp
Cumin Seeds – 1/2 tsp
Coriander Powder – 1 tsp
Salt – 1 tsp
Method:
1. Wash the dal and place it in a pressure cooker with the turmeric powder, 2 drops of oil and water.
2. Pressure cook the dal.
3. Switch off the heat after one whistle.
4. The dal should not be overcooked or it will turn mushy.
5. Drain the dal and reserve the water.
6. Chop the onion, zucchini, tomatoes and garlic.
7. Heat the remaining oil in a pressure cooker over moderate heat.
8. Add the onion and saute until it turns golden brown.
9. Reduce heat and add the garlic, red chillies, curry leaves, spices and salt.
10. Saute for a few minutes.
11. Add the zucchini and dal water.
12. Pressure cook for 2 minutes.
13. Mix the tomatoes and the dal into the zucchini and heat to simmering point.
14. Serve hot.
