Aloo Baingan Jhol

Ingredients:
Potatoes – 4, medium
Brinjals – 2, medium
Tomatoes – 2
Onion – 1, large, sliced
Tamarind Extract – 1 tblsp
Turmeric Powder – 1 tsp
Salt to taste

Grind to a very fine paste:
Coriander Seeds – 1 1/2 tblsp
Cumin Seeds – 1 tsp
Red Chillies – 3
Mustard Seeds – 2 tsp
Garlic – 6 to 8 cloves

For Seasoning:
Oil – 3 to 4 tblsp
Bay Leaves – 2

Method:
1. Cut all the vegetables into fairly large pieces and keep each separate.
2. Heat oil, add bay leaves and onions along with turmeric powder. Fry till browned.
3. Add potatoess, fry on low heat till quite soft, keeping vessel covered in-between frying.
4. Add brinjals, continue to fry.
5. Add tomatoes, fry for some more time all the vegetables, sprinkling some water to prevent it getting burnt.
6. Reduce heat, cover and allow to cook till vegetabls are nearly done.
7. Add ground paste, tamarind pulp and salt, some more water if necessary.
8. Simmer for some more time.
9. Serve hot with rice.
