Cucumber Kosumalli

Cucumber – 1, large
Moong Dal – 1/2 cup
Coconut – 2 tblsp, grated
Juice of 1 Lemon
Coriander Leaves – 1 tblsp, chopped
Salt to taste

For Seasoning:
Oil – 2 tsp
Mustard Seeds – 1/2 tsp
Green Chillies – 2
Curry Leaves – 2 sprigs
Asafoetida – a pinch

1. Wash and soak dal for 30 minutes. Strain and set aside.
2. Peel and chop cucumber, cut chilli into 2 to 3 pieces each.
3. Mix soaked dal, cucumber, coriander leaves, coconut and salt.
4. Add lemon juice.
5. Season mustard seeds in oil and when done add asafoetida, green chillies and curry leaves.
6. Add to cucumber, mix thoroughly, chill and serve.
