Sweet and Sour Vegetables with Paneer

Ingredients:
Green Pepper – 1, seeded and cut into squares
Yellow Pepper – 1, seeded and cut into squares
Cherry Tomatoes – 8
Cauliflower Florets – 8
Pineapple Chunks – 8
Paneer Cubes – 8
Plain Boiled Rice – to serve

For the Seasoned Oil:
Oil – 1 tblsp
Lemon Juice – 2 tblsp
Salt – 1 tsp
Black Peppercorns – 1 tsp, crushed
Clear Honey – 1 tblsp
Chilli Sauce – 2 tblsp

Method:
1. Preheat the grill to hot. Thread the pepper squares, cherry tomatoes, cauliflower florets, pineapple chunks and paneer cubes on to four skewers, alternating the ingredients. Place the skewers on a flameproof dish or in a grill pan.
2. In a small bowl, combine all the ingredients for the seasoned oil. If too thick, add 1 tblsp water.
3. Brush the vegetables with the seasoned oil. Grill for about 10 minutes until the vegetables begin to darken slightly, turning the skewers regularly to cook evenly.
4. Serve on a bed of plain boiled rice.
