Ingredients:
Lean boneless Lamb – 400 gms
Large Onion – 1, sliced
Garlic – 1 tsp, chopped fine
Fresh Ginger – 2 tsp, grated
Dark Soya Sauce – 1 tblsp
Dry Sherry – 1 tblsp
Cornflour – 2 tsp
Sesame Oil – 1 tblsp
Vegetable Oil – 2 tblsp
Toasted Sesame Seeds – 2 tsp, optional
Sliced Spring Onions or Cilantro Leaves – to garnish
Red and Green Chillies – to garnish

Method:
1. Shred the lamb finely.
2. In a bowl, combine the garlic, ginger, soy sauce, sherry, sesame oil and cornflour.
3. Mix well and add the lamb.
4. Marinate for atleast 2 hours.
5. Heat oil in a wok.
6. Stir fry slices of onion for a few seconds.
7. Remove and stir fry the meat for about 1 to 2 minutes or till just about cooked.
8. Add the onions and stir fry for another 1 minute or so.
9. Remove and place on a serving dish.
10. Garnish with toasted sesame seeds, spring onions and the chillies.
