Banana Cake with Crumb Topping

Ingredients:
Butter – 1/2 cup
Sugar – 1 1/3 cups
Eggs – 2, slightly beaten
Flour – 2 cups, sifted
Baking soda – 1 tsp
Salt – 1/2 tsp
Nutmeg – 1/2 tsp
Buttermilk – 1/3 cup
Mashed banana – 1 cup
Vanilla – 1 tsp

For crumb topping:
Crushed corn flakes – 1/3 cup
Sugar – 1/4 cup
Butter – 1 tbsp
Chopped pecans or walnuts – 1/4 cup

Method:
1. Mix butter and sugar in a mixing bowl until fluffy, then add eggs and beat thoroughly.
2. Sift the flour with soda, salt and nutmeg and mix it with the above mixture.
3. Gently add in the buttermilk, mashed banana and vanilla till a smooth batter is achieved.
4. Pour batter in an 11″ square or round baking pan.
5. Mix together the topping ingredients and spread evenly on top of the batter.
6. Bake at 350F for about 40 to 50 minutes, or until a tooth pick inserted in center comes out clean.
