Mughlai Paratha

Paratha with egg coating
Ingredients:
250gms wheat flour
2 eggs
6 tbsp oil
1 tsp baking powder
salt to taste

Method:
1. Sieve together flour, salt and baking powder. Rub the flour with 2 tablespoon oil and slowly add water to make a stiff dough.
2. Divide the dough into 8 equal portions and shape them into round balls. Roll out each into a thick flat round. Apply a little oil, sprinkle a little flour and fold it into a semicircle. Again apply oil and flour. Fold it lengthwise. Roll it, press down and roll out into a square of 8×8
3. Brush the surface of each paratha with beaten eggs and turn all four corners towards the centre.
4. Heat griddle and apply oil liberally. Put the parathas on it. Cook by adding oil around the edges. Turn and fry the other side by applying oil. When brown patches appear on both sides, remove from the griddle. Serve hot.
