Creamy Prawn and Pasta Salad

A delicious and easy to make salad with pasta, prawns and choice of vegetables.

Creamy Prawn and Pasta Salad

Ingredients:
Prawns – 150 gms, cooked, peeled
Pasta (Macaroni, Penne or any variety) – 150 gms, cooked as per packet instructions
Capsicum – 1, small, finely chopped
Celery – 1, finely sliced
Spring Onion – 1, finely sliced
Cherry Tomatoes – 2, quartered (optional)
Sour Cream – 1/4 cup
Mayonnaise – 2 1/2 tblsp
Lemon Zest – 1 1/2 tsp
Basil Leaves – few, chopped
Lemon Juice – 3 tsp
Sambar Onions (Shallots) – 2 tblsp, fried
Hot Sauce (Tabasco) – few drops

Method:
1. Mix the cooked pasta, capsicum, prawns, onion, celery and basil in a bowl.
2. Combine the sour cream, mayonnaise, lemon zest, lemon juice and hot sauce in another bowl.
3. Whisk well and add to the pasta bowl.
4. Mix well.
5. Garnish with fried onions and serve at once.
