Karamani Garlic Rice Recipe

Cowpeas / Black Eyed Peas

Ingredients:
Raw Rice – 2 cups
Dried Karamani (Cowpeas/Black Eyed Peas) – 1/4 cup, soaked in water for 15 to 30 minutes
Green Karamani – 50 gms, long, chopped into 1 inch pieces
Small Onions – 10, sliced
Garlic – 10 cloves, peeled, chopped
Tomato – 1, chopped
Capsicum – 1/2
Red Chilli Powder – 1 tsp
Oil – 1/4 tblsp
Ginger – 1/2 inch piece, peeled, finely chopped
Coriander Leaves – little
Salt as per taste

Method:
1. Dry roast the rice for a minute.
2. Heat oil in a pressure cooker.
3. Add the garlic, onions, capsicums and saute well for a minute or two.
4. Add the chopped karamani and saute for a minute.
5. Add red chilli powder, tomatoes, ginger and 3 cups of water.
6. Add salt, rice, dried karamani and mix well.
7. Pressure cook until 1 whistle.
8. Garnish with coriander leaves.
9. Serve hot with raita.
