Lobster and Corn Bruschetta

Ingredients:
Lobster – 1, small (about 300 to 350 gms), cooked, cleaned, chopped
Sweet Corn Kernels – 3/4 to 1 cup
Extra-Virgin Olive Oil – 1 tblsp plus extra
Red Capsicum – 1, small, seeds removed, chopped
Spring Onions – 1 tblsp, finely chopped
Small Onion – 1, minced
Avocado – 1/4, pitted, finely sliced
Garam Masala Powder – 2 tsp
Thick Cream – 2 1/2 tblsp
Coriander Leaves – handful, chopped
French Baguette – 1, small, sliced, toasted
Salt as per taste
Black Pepper Powder as per taste

Method:
1. Heat oil in a pan over medium flame.
2. Saute the onions, corn and capsicum for 2 to 3 minutes.
3. Mix the garam masala powder and cream in a bowl.
4. Add to the pan and cook for a minute.
5. Add lobster, coriander leaves and spring onions.
6. Stir well.
7. Add salt and pepper powder.
8. Reduce flame and simmer for 6 to 8 minutes.
9. Spoon over the lobster and corn mixture on the baguette slices.
11. Garnish with an avocado slice and serve at once.
