Barbecued Lemongrass Chicken

Chicken Breasts – 3
Sunflower Oil – 1 tblsp

For the marinade:
Lemongrass – 2 stalks, finely chopped
Garlic – 2 cloves, peeled, minced
Fish Sauce – 2 tsp
Sugar – 2 tsp
Turmeric Powder – 1/2 tsp
Chicken Stock – 2 to 3 tblsp
Black Pepper Powder – 1/4 tsp
Salt – 1/4 tsp

1. Combine all the marinade ingredients and grind until smooth.
2. Rub this all over the chicken breasts and keep aside for 8 hours.
3. Heat a little oil in a pan over medium flame.
4. Add the marinated chicken and cook until light brown, turning once or twice.
5. Remove and transfer the chicken pieces to a baking tray.
6. Bake in a preheated oven at 375F for 5 minutes.
7. Alternatively, grill the chicken on a preheated charcoal grill for 10 to 15 minutes.
8. Transfer to a serving platter.
9. Serve with mint chutney.
