The traditional way to drink tequila is to shake a little slat on the back of your hand between the thumb and forefinger and, holding a wedge of lemon or lime, lick the salt, suck the fruit and then down a shot of tequila in one. This cocktail, attributed to Francisco Morales and invented in 1942 in Mexico, is a more civilized version.
INGREDIENT:
Lime wedge
Coarse salt
4-6 cracked ice cubes
3 measures white tequila
1 measure triple sec
2 measures lime juice
Slice of lime, to decorate
METHOD:
1. Rub the rim of a chilled glass with the lime wedge and then dip in the saucer of coarse salt to frost.
2. Put the cracked ice cubes into a cocktail shaker. Pour the tequila, triple sec and the lime juice over the ice. Shake vigorously until a frost forms.
3. Strain into the prepared glass and decorate with lime slice.
