Ingredients:
Brinjals - 5
Curds - 7 cups
Onions - 3
Tomatoes - 3
Ginger - 1 tbsp
Garlic - 1 tbsp
Chilli Powder - 1 tsp
Cumin Seeds - 1/2 tsp
Turmeric Powder - 1 tsp
Garam Masala Powder - 1 tsp
Coriander Leaves - 1 cup
Oil - 100 ml
Salt as per taste
Method:
1. Heat 1 cup of oil in a pan.
2. Deep fry brinjals till crisp and done.
3. Drain and reserve.
4. Reduce oil to 1/4 cup.
5. Heat onions, garlic and ginger. Fry till golden brown.
6. Add chilli, turmeric and garam masala powders and salt.
7. Add curds and simmer till blended.
8. Drop in tomatoes and brinjals and simmer for 4 to 5 minutes.
9. Garnish with coriander leaves, roasted cumin seed powder and serve with rice.
