Ingredients:
Self-rising Flour - 3/4 cup
Self-rising Whole Wheat Flour - 1/3 cup
Sugar - 2 tbsp
Egg - 1
Milk - 3/4 cup
Bananas - 2, peeled
Butter - for frying
Ingredients:
1. Sift both types of flour into a mixing bowl, adding any bran left in the sieve.
2. Stir in the sugar and make a well in the center of the mixture.
3. Pour the milk into a measuring cup and crack the egg straight into it.
4. Lightly beat the egg and milk with a fork or whisk until they are mixed.
5. Pour the egg mixture into the well in the center of the flour and sugar.
6. Beat with a wooden spoon until you have a smooth,creamy batter.
7. Leave the batter to rest for about 30 minutes—this will make the pancakes lighter.
8. Mash the bananas in a bowl then stir them into the rested batter.
9. Heat a small pat of butter in a frying pan.
10. Add 3 small ladlefuls of batter to make 3 pancakes, each one about 3 1/4 inch in diameter.
11. Cook for 2 minutes, or until bubbles appear on the surface.
12. Flip the pancakes and cook for another 2 minutes, so both sides are light golden.
13. Keep the cooked pancakes warm.
14. Serve.
