Bread Pulao

Bread Pieces
Seeraga Samba Rice – 250 gms, soaked for a few minutes
Coconut Milk – 1 cup
Onion – 1, finely chopped
Green Chillies – 2
Mint Leaves –  handful, chopped
Coriander Leaves – handful, chopped
Curd – 2 tsp
Ginger Garlic Paste – 1 tsp
Cinnamon – 1
Clove – 1
Cardamom – 1
Bay Leaf – 1
Bread Pieces – 1/2 cup, lightly fried
Oil – 3 tsp
Ghee – 2 tsp
Salt as per taste

1. Heat ghee and oil in a pressure pan over medium flame.
2. Add cinnamon, clove, cardamom and bay leaf. Stir for 30 seconds.
3. Add the onions, green chillies, mint leaves, coriander leaves and ginger garlic paste.
4. Stir-fry for a minute and add curd, salt and coconut milk.
5. Pour a cup of water and continue to cook.
6. Cover the pan with a lid and cook till the rice is done.
7. Add the fried bread pieces and mix well.
8. Serve hot.
