Couscous Salad with Orange and Dates

Ingredients:

  • Couscous – 1 1/2 cups, instant
  • Boiling Water – 1 1/2 cups
  • Grated Zest and Juice of 1 Lemon
  • Olive Oil – 3 tblsp
  • Salt as per taste
  • Ground Black Pepper
  • Orange – 1
  • Dates – 2/3 cup, chopped
  • Fresh Herbs – 3/4 cup, chopped

Method:

  1. Pour the couscous into a heatproof dish.
  2. Add the boiling water and lemon juice.
  3. Stir and cover tightly with cling wrap.
  4. Keep aside for 10 minutes.
  5. Fluff up the couscous with a fork and add olive oil, salt and pepper.
  6. Leave to cool.
  7. Grate the zest from the orange and peel it.
  8. Remove the orange segments by cutting along either side of each segment, between the skin and flesh.
  9. Add the lemon and orange zests into the couscous.
  10. Add the orange segments, dates and herbs.
  11. Mix well and serve.
