Ingredients:
- Couscous – 1 1/2 cups, instant
- Boiling Water – 1 1/2 cups
- Grated Zest and Juice of 1 Lemon
- Olive Oil – 3 tblsp
- Salt as per taste
- Ground Black Pepper
- Orange – 1
- Dates – 2/3 cup, chopped
- Fresh Herbs – 3/4 cup, chopped
Method:
- Pour the couscous into a heatproof dish.
- Add the boiling water and lemon juice.
- Stir and cover tightly with cling wrap.
- Keep aside for 10 minutes.
- Fluff up the couscous with a fork and add olive oil, salt and pepper.
- Leave to cool.
- Grate the zest from the orange and peel it.
- Remove the orange segments by cutting along either side of each segment, between the skin and flesh.
- Add the lemon and orange zests into the couscous.
- Add the orange segments, dates and herbs.
- Mix well and serve.
