Green and White Bean Salad

Ingredients:

  • Great Northern Beans – 1/2 cup, dried and soaked overnight
  • Fine Green Beans – 225 gms, trimmed
  • Red Onion – 1/4, thinly sliced
  • Black Olives – 12, pitted
  • Chives – 1 tblsp, chopped
  • Salt

For Dressing:

  • Lemon Juice – 1/2 tblsp
  • Dijon Mustard – 1/2 tsp
  • Extra Virgin Olive Oil – 6 tblsp
  • Salt and Pepper

Method:

  1. Drain the soaked beans and put it in a saucepan with plenty of fresh water to cover.
  2. Bring to a boil, then boil rapidly for 15 minutes.
  3. Reduce the heat slightly and cook for additional 30 minutes or until tender.
  4. Add salt in the last 5 minutes of cooking.
  5. Drain and set aside.
  6. Plunge the green beans into a large pan of boiling water.
  7. Return to a boil and cook for 4 minutes.
  8. Drain and set aside.
  9. Whisk together the dressing ingredients and then let it stand.
  10. While both the beans are still slightly warm, tip them into a warmed shallow serving dish.
  11. Scatter over the onion slices, olives and chives.
  12. Whisk the dressing again and spoon over the salad.
  13. Serve immediately.
