Coconut Rice Recipe

Rice – 250 gms
Coconut – 1 cup, grated
Urad Dal – 1 tsp
Red Chilli – 3
Asafoetida Powder – 1/2 tsp
Mustard Seeds – 1 tsp
Curry Leaves – 1 tsp, chopped
Cashewnuts – 10
Ghee – 2 tsp
Raisins – 15 (optional)
Oil – 4 tsp
Salt to taste

1. Wash and cook rice.
2. Pour oil in a pan and heat oil.
3. Add mustard seeds and let it splutter.
4. Add urad dal, asafoetida, red chilli and chopped curry leaves.
5. Saute for a while.
6. When it turns brown, add grated coconut and mix them all until coconut turns brown.
7. Add salt.
8. Fry the chopped cashewnuts and raisins in ghee.
9. Mix all the ingredients in rice along with cashewnuts and raisins.
10. Stir well.
11. Serve with appalam or chips.
