Ingredients:
Cooking Apples – 225 gms, peeled, cored, quartered
Boiling Water – 125 ml
Ghee – 1 1/2 tblsp
Green Cardamoms – 5
Cinnamon Sticks – 2 one inch sticks
Brown Onion Paste – 2 tblsp
Black Salt – 1/2 tsp
Tamarind Extract – 1/2 tblsp, thick
Black Cumin Seeds – 1/2 tblsp
Paprika – 1 tblsp
Turmeric Powder – 1/2 tsp
Ginger – 1/4 tsp, ground
Method:
1. Heat ghee in a pan over moderate flame.
2. Stir-fry the paprika, turmeric powder and ginger for 10 seconds.
3. Add the apples and cook for a minute.
4. Pour the water and bring to a boil.
5. Add the cardamoms, cinnamons, onion paste, salt and tamarind extract.
6. Cover and cook for 3 to 4 minutes.
7. Sprinkle cumin seeds and stir gently.
8. Remove and serve.
