Poha Pulao

Poha – 50 gms, soaked and dried
Vegetable Oil – 1/2 tblsp + more
Mustard Seeds – 1/4 tsp
Turmeric Powder – 1/8 tsp
Red Chilli Powder – 1/4 tsp
Garam Masala Powder – 1/4 tsp
Cauliflower Florets – 1/4 cup, washed
Potato – 1, small, chopped
French Beans – 50 gms, stringed and chopped
Carrot – 1, scraped, washed, diced
Tomato – 1, quartered
Green Peas – 50 gms, shelled, lightly boiled
Paneer – 25 gms, cubed
Sugar – 1/2 tsp
Lemon Juice – 1/2 tblsp
Green Chillies – 1 to 2, deseeded
Coriander Leaves – handful
Ginger – 1/2 inch piece
Salt as per taste

1. Heat 1/2 tblsp oil in a pan over moderate heat.
2. Fry the mustard seeds, turmeric powder, red chilli powder and garam masala powder for 10 seconds.
3. Add the poha and cook turning it from time to time gently.
4. Cover the pan with a lid and reduce the heat to low.
5. Cook for 30 seconds before removing it from the heat.
6. In another pan,heat some more oil and add the cauliflower florets.
7. Cook till the cauliflower turns brown.
8. Add the potatoes, beans, carrots and peas.
9.  Stir-fry for a minute before adding the tomatoes.
10. Cook till tomatoes start to change colour and the skin starts to peel off (approx 2 minutes).
11. Add the paneer cubes.
12. Add sugar, salt, green chillies and lemon juice.
13. Mix well.
14. Add the poha and mix gently.
15. Transfer to a serving dish.
16. Garnish with coriander leaves.
17. Serve hot.
