Ginger Tomato Chicken Pasta
Whole Wheat Pasta – 4 cups, cooked
Chicken Breast – 450 gms, skinless, boneless, cubed
Olive Oil – 2 tblsp
Green Onions – 4, sliced
Garlic – 4 cloves, crushed
Tomatoes – 4 cups, diced
Mushrooms – 1 cup, sliced
Zucchini – 2 cups, sliced
Ginger Root – 2 tblsp, grated
Dried Red Chilli Flakes – 1/4 tsp
Coarse Sea Salt – 1/2 tsp
Ground Black Pepper as per taste
Lemon Juice – 2 tblsp

1. Heat 1 tblsp of oil in a pan over medium heat.
2. Add the chicken cubes and saute for 15 minutes.
3. Remove and keep aside.
4. Heat the remaining 1 tblsp oil in a pan over medium heat.
5. Saute the green onions and garlic for 2 minutes.
6. Add the tomatoes, mushrooms, zucchini, 1 tblsp ginger root, red chilli flakes, salt, pepper powder and chicken cubes.
7. Cover and simmer over medium heat for 20 minutes.
8. Remove from heat.
9. Add the cooked pasta to the vegetables.
10. Add lemon juice and 1 tblsp ginger root.
11. Toss well and serve hot.
