Pumpkin Corn Bharta Recipe

Red Pumpkin – 400 gms, peeled, skin and seeds removed and cut into small pieces
Corn Kernels – 100 gms
Oil – 1 tblsp
Ginger Garlic Paste – 1 tsp
Turmeric Powder – 1/4 tsp
Coriander Powder – 1 tblsp
Jeera Powder – 1 tsp
Red Chilli Powder – 1/2 tsp
Lemon Juice – 1 tsp
Salt as per taste

1. Heat 1 to 2 cups of water in a pan.
2. Add the pumpkin and cook covered over low heat till water has evaporated and pumpkin pieces are tender.
3. Mash the pumpkin well and keep aside.
4. Heat oil in a pan.
5. Add the ginger garlic paste.
6. After 30 seconds add the mashed pumpkin.
7. Cook over low heat, stirring occasionally.
8. Add the turmeric powder, coriander powder, jeera powder and red chilli powder.
9. Mix well.
10. Add the corn and cook for another 4 minutes.
11. Add lemon juice and mix well.
12. Serve as a side dish with roti.
