Kathirikai Kuzhambu Recipe

Ingredients :

Brinjals – 125 gms
Red gram dal – 1/4 cup
Turmeric powder – 1 tsp
Small ball of tamarind – 1
Salt to taste

Kuzhambu podi – dry roast and powder
Coriander seeds – 1 1/2 tbsp
Red gram dal – 1/2 tbsp
Bengal gram dal – 1/2 tbsp
Pepper – 1/4 tsp
Cumin seeds – 1/2 tsp
Fenugreek seeds – 1/4 tsp
Mustard seeds – 1/4 tsp
Red chilles – 4 to 6
Turmeric powder – 1/2 tsp

Seasoning :
Oil – 1 tbsp
Mustard seeds – 1/2 tsp
Fenugreek seeds – 1/2 tsp
A large pinch of Asofoetida
Red chilly – 1
Green chillies, slit – 2
Curry leaves – 2 sprig

Method :

1.  Boil dal with 1/2 tsp turmeric powder, add 1 -1 1/2 cups of hot water, churn, set aside.
2.  Wash and slit brinjals into finger length pieces. Soak tmarind in hot water, take out extract.
3.  Heat oil, add seasonings and when done, add brinjal pieces along with turmeric powder. Saute on low heat till brinjals turn soft.
4.  Add tamarind extract, salt, half of the prepared powder and if too thick, Add a little water and let it simmer for a while.
5.  Add dal, simmer further for 5- 7 minutes ot till the whole is well blended. If the gravy is rather thin, Add 1 – 1 1 /2 tsp rice flour mixed in 1/4 cup water to paste. Simmer for some time till it thickens.
