Glass Noodle Salad

Ingredients:
Dried Glass Noodles or Bean Thread Noodles – 100 gms, soaked in warm water for 15 minutes, drained and cut into pieces
Chicken Breast – 1, poached and shredded
Dried Shrimps – 1 tblsp, soaked in warm water for 5 minutes, drained and lightly pounded
Carrot – 1/2 cup, coarsely grated
Celery – 1/2 stalk, chopped
Red Onion – 1/4 cup, thinly sliced
Bean Sprouts – 1 cup, lightly blanched
Spring Onion – 1, chopped
Coriander Leaves – 1 sprig, roughly chopped
Mint Leaves – 1/2 cup
Lime Juice – 3 tblsp
Fish Sauce – 3 tblsp
Green Chillies – 2, seeded and coarsely chopped
Peanuts – 2 tblsp, roasted and chopped

Method:
1. Blanch the noodles in a pan.
2. Remove and rinse under cold water until cool. Drain.
3. Place the noodles in a bowl.
4. Add the remaining ingredients except peanuts.
5. Mix well.
6. Arrange on a plate.
7. Garnish with the peanuts.
8. Serve.
