Egyptian Fried Fish

Ingredients:
Whole Fish – 1, about 900 gms, thickly sliced
Oil – 300 ml

For the Sauce:
Oil – 2 tblsp
Onion – 1, large, thinly sliced
Tomatoes – 3, large, blanched, peeled and coarsely chopped
Walnuts – 100 gms, chopped
Pine Kernels – 50 gms
Dry White Wine
Parsley – 3 tblsp, finely chopped
Salt – 1/2 tsp
Black Pepper – 1/2 tsp
Allspice Powder – 1/2 tsp

Method:
1. Heat the oil to sizzling in a large pan.
2. Add the fish and fry for 5–10 minutes. Turn at least once and shake the pan once or twice to prevent the fish sticking.
3. Remove the fish, drain and transfer to a large dish.
4. To make the sauce, heat 2 tblsp oil in a large pan.
5. Fry the onions until soft.
6. Add tomatoes and simmer till soft.
7. Add the walnuts and pine kernels.
8. Fry for 2 minutes.
9. Add enough wine to cover and season with parsley, salt, pepper and allspice powder.
10. Simmer for a few minutes.
11. Add the fried fish.
12. Turn to coat with the sauce.
13. Simmer for 15 minutes and remove.
14. Serve with rice and salad.
