Sekwa Chara (Nepalese Chicken Roast)

Ingredients:
Broiler Chicken – 1 kg, cut into 6 to 8 pieces

Grind Together:
Onions – 2
Garlic – 2 tsp
Ginger – 1 tsp
Cumin Seeds – 1 tsp
Coriander Seeds – 2 tsp
Salt to Taste
Yoghurt – 1/2 cup
Garam Masala – 1 tsp
Turmeric Powder – 1 tsp
Red Chilli Powder – 2 tsp
Tomatoes – 2, medium, pulped
Mustard Oil – 1/2 cup
Clarified Butter – 1 cup
Lemon Juice – 2 tsp

Method:
1. Wash the chicken pieces well.
2. Make light cuts with a sharp knife on each piece.
3. Pat the pieces dry and keep aside.
4. Mix all the ground spices, salt, yoghurt, dry spices, tomato pulp (liquid discarded), mustard oil and clarified butter.
5. Add the chicken and marinate for an hour.
6. Preheat a gas tandoor or a barbeque rack with coal underneath.
7. Roast the chicken pieces, turning frequently and basting with the leftover marinade.
8. When done, the chicken should be dry but avoid scorching it.
9. Serve hot.
