Ingredients:
Rice – 1 cup, long-grained, washed
Coconut – 2 3/4 cups, grated
Ghee – 1 tbsp
Onion – 1, medium, finely sliced
Cloves – 4
Cinnamon – 2 one inch sticks
Green cardamoms – 2
Turmeric Powder – 1/4 tsp
Sugar – 1/4 tsp
Salt – 1 1/2 tsp
Onion – 1, medium, thinly sliced, fried
Cashewnuts – 8 to 10
Raisins – 1 tbsp, fried
Method:
1. Blend the coconut with 2 cups of warm water to extract 2 cups of coconut milk.
2. Keep aside.
3. Heat the ghee in a pan.
4. Saute the onion, cloves, cinnamon sticks, and green cardamoms for approximately 3 minutes.
5. Add the rice and stir fry for 1 minute.
6. Add the turmeric powder, sugar, salt and the coconut milk.
7. Stir well.
8. Bring the mixture to the boil.
9. Lower heat, cover and simmer till the rice is cooked.
10. Serve garnished with fried onion, cashewnuts and raisins.
