Ingredients:
Semolina – 2 1/2 cups
Ghee – 1 cup
Almonds – 1 cup, blanched
Raisins – 2 cups
Eggs – 4, beaten
Milk – 5 1/2 cups, full cream, cold
Green Cardamoms – 6, powdered
Nutmeg Powder – 1/4 tsp
Rose Water – 2 tsp

Method:
1. Heat 1/2 cup ghee in a kadai.
2. Fry the almonds and raisins.
3. Remove and drain the excess oil on absorbed paper towels.
4. In the same ghee, add the semolina, saute on low heat till a pleasant aroma emanates.
5. Then remove and mix in 1/2 cup water.
6. Return to heat and cook for 2 to 3 minutes.
7. Remove from heat and add the sugar.
8. Mix the eggs and milk together.
9. Add this to the semolina mixture.
10. Return to heat, cook on a low flame, stirring continuously, to avoid formation of thickens.
11. Mix in the green cardamom powder, nutmeg powder, and rose water.
12. Garnish with almonds, raisins and a dash of rose water.
13. Serve warm.
