Zucchini – 3 cups, finely sliced
Onions – 1/2 cup, finely chopped
Tomatoes – 1/2 cup, chopped
Turmeric Powder – 1/2 tsp
Red Chilli Powder – 1/2 tsp
Cumin Powder – 1 tsp
Salt – 1/2 tsp
Fresh Coconut – 2 tblsp, grated

For Tempering:
Oil – 2 tblsp
Curry Leaves – 3
Black Mustard Seeds – 1 tsp
Urad Dal – 1 tsp

1. Put the oil in a pan over medium heat.
2. When the oil is hot add the urad dal, mustard seeds and curry leaves.
3. Fry over medium heat for about 30 seconds.
4. Add the onions and tomatoes to the pan and stir-fry for a couple of minutes.
5. Sprinkle in the turmeric powder, cumin powder, salt and red chilli powder.
6. Stir well.
7. Add zucchini and mix well.
8. Cover and cook for 4 minutes till tender.
9. Add coconut and stir well.
10. Remove from heat and Serve.
