Ingredients for Chettinad Fish Fry
1Fish Filletpreferably pomfret (about 500 g)
1Sambar Onion(Shallot)peeled
a pinchTurmeric Powder
1tspGinger Garlic Paste
fewCurry Leaves
as per tasteSalt
1 to 2tspLemon Juice
1 to 2tspRice Flouroptional
For the masala:
1/4tspCumin Seeds
1/4tspSaunf
1/2tspCoriander Seeds
1/4Black Peppercorns
3Dry Red Chillies
1/4tspSalt optional
a pinchTurmeric Powder
How to make Chettinad Fish Fry
Wash the fillet well.
Rub the turmeric powder and salt all over.
Keep aside for a minute or two.
Wash again and keep aside.
Dry the masala ingredients (except salt) for 15 seconds and grind to a fine powder.
Add salt and mix well.
Grind the onion and ginger garlic paste to a smooth mixture.
Add salt, curry leaves, rice flour and ground masala powder to the paste.
Mix well and rub this all over the fillet.
Keep aside to marinate for 10 to 15 minutes.
Heat oil in a shallow frying pan.
Fry the marinated fish until golden brown and crisp.
