Ingredients:
Chicken – 1 kg
Coriander Powder – 1 1/2 tblsp
Chilli Powder – 1 tblsp
Turmeric Powder – 1/2 tsp
Pepper Powder – 1/2 tsp
Cumin Seeds – 1/2 tsp
Cinnamon – 1 inch piece
Cloves – 8
Cardamom Pods – 4
Aniseed – 1 tsp
Button Onions – 1/4 cup, sliced
Garlic – 1 tblsp, chopped
Ginger – 1/2 tblsp, finely chopped
Salt to taste
Vinegar – 1 tblsp
Curry Leaves – few
Hot Water – 1/2 cup
Refined Vegetable Oil – 1/4 cup
Method:
1. Wash and clean the chicken.
2. Cut into pieces of desired size.
3. Grind coriander powder, chilli powder, turmeric powder, pepper powder, cumin seeds, cinnamon, cloves, aniseed and cardamom pods into a paste.
4. Blend the masala into the chicken pieces.
5. Add button onions, garlic, ginger, salt, vinegar and curry leaves.
6. Add hot water to cook the chicken.
7. Turn heat low, cover and cook until chicken is tender.
8. When it is cooked and the gravy has thickened, remove from fire.
9. Separate the chicken pieces from the gravy.
10. Heat oil.
11. Add the chicken pieces and fry until brown.
12. Pour the gravy over and fry until the chicken pieces are coated with it.
13. Serve hot.
