Ingredients:
Long grain rice – 1 cup
Cauliflower – 1 cup, chopped
Green peas – 1/2 cup
Potatoes – 1 cup, cubed
Cloves – 3
Cinnamon stick – 1 inch piece
Cardamom – 3
Whole black pepper – 6
Onion – 2, chopped
Lemon juice – 3 tbsp
Thick cream – 4 tbsp
Paste of 1 cup green coriander leaves, 1 cup mint leaves, 3 green chillies and 4 cloves garlic – 4 tbsp
Vegetable oil
Salt as per taste
Method:
1. In hot oil fry cloves, cardamoms, cinnamon and black pepper for 1 minute.
2. Add onions and fry till light brown.
3. Add the vegetables and fry for 3 minutes.
4. Add coriander/mint paste and fry on low heat for 2 minutes stirring frequently to prevent sticking.
5. Add rice and 2 1/4 cups water.
6. Cook on medium heat. When almost cooked add cream and lemon juice and stir gently.
7. Cook covered for 3 minutes and serve hot.
