Mutton Soup
Ingredients:
Mutton Bones – 500 gms, (preferably rib bones)
Water – 1.5 to 2 litres
Salt – 3/4 tsp
Turmeric Powder – 1/2 tsp
Meat Curry Powder – 1/2 tblsp
Oil – 1 1/2 tblsp
Cinnamon – 1 one inch stick
Cardamoms – 5
Cloves – 3
Onion – 1, finely sliced
Curry Leaves – handful
Coriander Leaves – handful, chopped

For the masala:

Tomatoes – 2, small
Water – 1/2 cup
Green Chillies – 2
Ginger – 1/2 inch piece, peeled
Garlic – 5 cloves, peeled
Coriander Seeds – 1 tblsp
Fennel Seeds – 1/2 tblsp
Cumin Seeds – 1 tsp
Mint Leaves – few
Coriander Leaves – few

Method:
1. Grind all the masala ingredients to a smooth paste.
2. Add the mutton bones, ground paste, water, salt, meat curry powder and turmeric powder into a large pot.
3. Place it over medium flame and boil for 1 hour or until the meat starts to fall off the bones.
4. Heat oil in a small frying pan.
5. Stir-fry the cinnamon, cardamom and cloves for 30 seconds.
6. Add onions and saute until golden brown.
7. Add this to the soup along with coriander leaves.
8. Simmer for 5 to 10 minutes and remove.
9. Pour into individual serving bowls.
10. Serve hot.
