Ingredients:
Strawberries - 500 gms, hulled
Fresh Orange Juice - 4 tblsp
Caster Sugar - 175 gms
Whipping Cream - 450 ml
For Decoration:
Strawberries
Strawberry Syrup
Method:
1. Finely mash the strawberries and mix with the orange juice to form a smooth puree.
2. Stir in the sugar.
3. Whip the cream until it forms soft peaks and fold into the puree.
4. Pour the mixture into a 1kg loaf tin.
5. Freeze for 1 1/2 hours or until partly frozen.
6. Turn the mixture into a bowl, break it up with a fork and then whisk until smooth.
7. Return the mixture to the loaf tin and freeze for atleast 5 hours until completely frozen.
8. Transfer to the fridge for 30 minutes before serving to soften.
9. Decorate with strawberries and strawbery syrup.
