Drumstick Egg Avial (Mutta Muringakka Avial)

Mutta Muringakka Avial
Ingredients:
Eggs – 4
Drumstick – 1, chopped
Coconut – 1 cup, grated
Red/Green Chillies – 2
Cumin Seeds – 1/2 tsp
Mustard Seeds – 1/4 tsp
Oil – 1 tsp
Curry Leaves – 1 small bunch
Curd – 1/3 cup
Coconut Oil – 1 tsp
Salt as per taste

Method:
1. Boil the eggs and drumsticks separately.
2. Remove the shells from the eggs and make a few incisions. Keep aside.
3. Combine and grind together the coconut, red chillies, 1/4 tsp cumin seeds.
4. Heat a pan over medim flame.
5. Add the boiled drumsticks, ground paste and salt.
6. Add the eggs and bring to a boil.
7. If required, add some water.
8. Simmer for a few minutes until it starts to thicken.
9. Heat little oil in a small frying pan.
10. Fry the mustard seeds and curry leaves.
11. Pour into the avial along with curd.
12. Mix well.
13. Serve hot.
