Lamb Boti
Lean Lamb – 175 gms, cubed
Garlic – 1 clove, minced
Ginger – 1/2 inch piece, grated
Coriander Leaves – 1/2 tblsp, chopped
Turmeric Powder – 1/4 tsp
Coriander Powder – 1/4 tsp
Cumin Powder – 1/4 tsp
Garam Masala Powder – 1/4 tsp
Red Chilli Powder – 1/2 tsp
Lemon Juice – 2 to 3 tblsp
Yogurt – 1 tblsp
Oil – 1/2 tblsp
Salt as per taste

1. Combine all the ingredients except the last three in a bowl.
2. Mix well until the lamb cubes are evenly coated.
3. Add the yogurt and oil. Mix well.
4. Cover the bowl with a lid or clingfilm and marinate overnight in the fridge.
5. Remove the bowl 30 minutes before cooking and sprinkle salt.
6. Skewer the pieces and grill for 15 minutes, turning once or twice.
7. Brush with the remaining marinade inbetween.
8. Serve hot with salad and mint sauce.

Note: If you are using an oven, cook for 25 minutes in a preheated oven at 230C/450F.
