Chicken Wings in Soy Sauce and Wine

Chicken Wings in Dark Soy Sauce and Rice Wine
Chicken Wings – 4, cut into 3 or 4 pieces
Rice Wine – 1/6 cup (40 ml)
Sesame Oil – 1 tblsp
Dark Soy Sauce – 1 tblsp
Ginger – 3 slices
Water – 1 cup
Spring Onion – 1, chopped
Celery Leaves – 1/2 tblsp, chopped
Black Pepper Powder – 1/2 tsp
Black Chinese Mushrooms – 4, dried, hard stems removed, caps sliced in half
Salt – 1/2 tsp
Sugar – 1/2 tsp

1. Mix the rice wine, sesame oil and black pepper powder in a bowl.
2. Marinate the chicken wings for 1 to 2 hours, covered.
3. Soak the mushrooms until soft.
4. Place a large pan over medium flame.
5. Add the marinated chicken wings, mushrooms, dark soy sauce, ginger, water, salt and sugar.
6. Bring to a boil and half cover with a lid.
7. Simmer for 20 minutes.
8. Add the spring onions and celery leaves.
9. Cook for a minute more and transfer to a serving plate.
10. Serve hot.
