Ingredients

  • 2 Chicken Breasts (skinned, boned, cut into thin strips)
  • 1 to 2 cloves Garlic (finely chopped)
  • 1 small Onion (finely chopped)
  • 1 Red Chilli (halved, seeds removed, cut into thin strips)
  • 1 Red Capsicum (halved, seeds removed, cut into thin strips)
  • 1 1/2 tbsp Olive Oil - tbsp
  • 100 ml Dry White Wine
  • 1/2 tbsp Coriander Leaves (chopped)
  • 1/2 tsp Tomato Puree
  • 1/4 tsp Sugar
  • Black Pepper Powder (As required)
  • Salt (As per taste)

Instructions

  • Heat 3/4 tbsp of olive oil in a large pan.
  • Stir-fry the chicken over high heat until slightly browned.
  • Remove and set aside.
  • Add the remaining oil to the pan.
  • Add garlic, chillies, onion, and capsicum. Fry until onions are soft.
  • Pour in the wine and bring to a boil.
  • Return the chicken to the pan, add salt and black pepper powder.
  • Reduce heat, cover, and simmer for 10-15 minutes.
  • Garnish with chopped coriander leaves.
